Tasting Notes

Appearance Deep ruby-purple with bright violet edges. Full-bodied with elegant legs reflecting concentrated but balanced fruit.
Nose Classic Cabernet aromatics of blackcurrant, black cherry, and cassis. Notes of cedar, pencil shavings, and graphite showcase the varietal character. Subtle hints of violet, dried herbs, tobacco, and dark chocolate with restrained oak influence.
Palate Beautifully structured with firm yet refined tannins and vibrant acidity. Flavors of cassis, blackberry, and dark cherry are complemented by notes of cedar, dark chocolate, and subtle spice. Mid-palate reveals minerality, graphite, and perfectly integrated oak. The cooler vintage produces exceptional elegance and terroir expression.
Finish Long and refined with persistent dark fruit, mineral, and oak spice. The tannins are firm but fine-grained, suggesting excellent aging potential. This vintage exemplifies the elegance and balance possible in mountain Cabernet from cooler years. A wine of remarkable purity and finesse.

Food Pairing

This powerful Cabernet Sauvignon pairs beautifully with:

Red Meats Grilled ribeye, filet mignon, braised short ribs, or rack of lamb with herb crust
Rich & Savory Beef Wellington, venison medallions, wild game stew, or bone marrow with parsley salad
Aged Cheese Aged cheddar, Parmigiano-Reggiano, Manchego, or blue cheese with walnuts

Vintage Notes

The 2023 vintage was characterized by cooler temperatures and well-timed rainfall, creating ideal conditions for elegant mountain Cabernet. The extended growing season allowed for gradual tannin development and flavor complexity while preserving natural acidity. Later harvest captured optimal phenolic maturity with moderate alcohol levels. The Jumble Down Mountain Block's elevation and exposure produced Cabernet of remarkable balance, showing both power and finesse in this classic vintage.
